Crusty Potato Pancakes

German style called 'kartoffelpuffer'. Not to be confused with 'stroopwafels'!!!



  • 6 med. potatoes, peeled and grated

  • 1 sm. onion grated

  • 3 eggs

  • 3/4 C. flour

  • 1 1/2 tsp. salt

  • canola oil for frying, about 1/2" deep


Grate potatoes coarsely into bowl of cold water.

Combine onion, egg, flour and salt in large bowl.

Drain potatoes, pressing out all liquid.

Beat potatoes into batter.

Spoon batter into hot shortening, spreading batter into 4'' rounds.

Brown on both sides slowly to cook potatoes thoroughly.

Drain on paper towels and serve hot.
