Also known as German Potato Salad
Ingredients:
4 lg. potatoes cooked with skins
4 slices bacon, chopped coarsely
3 oz. coarsely chopped onion 1 T. minced parsley
1 1/2 oz. white vinegar
1/4 tsp. salt
pepper to taste
Preparation:
Cook potatoes and keep hot.
Fry bacon until 3/4 cooked.
Add onions, parsley, vinegar, and seasonings. Simmer 2 minutes.
Skin potatoes and cut in 3/4" cubes in bowl.
Pour bacon mixture over potatoes, fat and all, and mix well.
Serve while hot.
Serves 4-5.
