Aunt Gratia's Bread
1/2 C. sugar
2 1/2 lbs. flour
2 1/2 C. milk
1 tsp. salt
1 stick butter
1 pkg. dry yeast
Dissolve yeast in 1/2 C. water.
Scald milk and add butter, sugar and salt. Cool to lukewarm.
Add yeast mixture.
Sift flour into another bowl and add liquid mixture.
Turn out onto floured board and knead for 10 min. or so.
Return to bowl, cover, and let rise for about two hours till doubled in bulk.
Divide for loaf pans (3 large or 4 small).
Knead for 5 min., place in greased pans and let rise again till doubled in bulk (about two hours).
Bake in 350 oven for about an hour, or more if large loaves.
Brush tops of loaves with butter, and turn out of pans onto sides to cool.
