Nanny's Whole Wheat Bread



  • 1 C. milk

  • 1 stick butter or margarine

  • 1/3 C. honey

  • 1 tsp. salt

  • 5 C. wheat flour

  • 1/4 C. wheat germ

  • 3 C. or less white flour

  • pkgs. dry yeast 1 tsp. honey

  • 1 C. lukewarm water


  • Combine first 4 ingredients in sauce pan over low heat until butter melts.

  • Remove from heat and cool to room temp.

  • Add yeast and honey to water and let work without disturbing.

  • Next, add yeast mixture to milk mixture in large mixing bowl.

  • Add 5 C. wheat flour and the wheat germ and mix well.

  • Add as much of the white flour as needed to make a stiff dough.

  • Turn onto board and knead for two minutes.

  • Pour 1 T. oil into large bowl, add dough in a mound to bowl and cover with a towel to set.

  • Let rise for 2 hrs.

  • Turn onto board, divide in two equal loaves, knead for a minute and shape into loaf.

  • Put into greased pans and cover.

  • Let set till double in bulk.

  • Bake 45 minutes at 350, till hollow sounding when tapped.
