Pop-Overs

A'la Pete!

With Strawberry Hard Sauce

 

Ingredients:


Pop-overs

  • 2 eggs

  • 1 C. milk

  • 1 C. sifted flour

  • 1/2 tsp. salt

  • 1 T. vegetable oil


Strawberry Hard Sauce

  • 1 stick (1/2 cup) softened (not room temperature) butter

  • 1 1/2 c. powdered sugar

  • 1/2 C. frozen (thawed) or fresh strawberries

Preparation:


Pop-overs

  • Pre-heat oven to 475.

  • Combine eggs, milk, flour, and salt, beat 1 1/2 minutes.

  • Add oil - beat 1/2 minute. Don't over beat.

  • Fill 6-8 cups in well greased muffin tin 1/2 full.

  • Bake at 475 for 15 min.; reduce heat to 350 and bake 25-30 min. or til brown and firm.

  • A few minutes before removing from oven, prick each to let steam escape.

  • If you like them dry inside, turn off oven and leave inside for 30 min., door ajar.

  • Serve hot with strawberry hard sauce.


Strawberry Hard Sauce

  • While the pop overs are baking.

  • Cream butter and powdered sugar.

  • Place strawberries in food processor and pulse until finely chopped, not pureed. Alternately you can simply chop finely by hand.

  • Mix into sugar/butter mixture until well blended.

  • Chill until the pop overs are ready!
