Stuffed Cherry Tomatoes
With Blue Cheese!
3 Dz. cherry tomatoes
3/4 C. cottage cheese
1/2 C. crumbled blue cheese
1 1/2 tsp. grated onion
1/4 C. sour cream
Salt and pepper to taste
Chopped chives (optional garnish)
Cut a thin slice from the tops of 36 cherry tomatoes.
With a small melon ball scoop, hollow out the centers.
Sprinkle the shells with salt, invert them on a rack, and let them drain for 15 min.
In a bowl combine remaining ingredients.
Fill the tomatoes with the mixture.
Sprinkle with chives.
