Tarragon Marinated Mushrooms
YIELD 32 servings (about 2 cups)
TIME About 15 minutes + marinating
Before marinating mushrooms, be sure to remove any dirt and wipe them clean with a damp cloth.
1 lb. button mushrooms, wiped clean, stems trimmed
1 ½ cups white wine vinegar
1 ½ cups extra-virgin olive oil
¼ cup minced fresh tarragon
2 T. Dijon mustard
2 T. minced garlic
1 T. sugar
Salt and black pepper to taste
Minced fresh tarragon
Halve or quarter mushrooms so they are bite-sized; transfer to a bowl or resealable plastic bag.
Whisk together vinegar, oil, ¼ cup tarragon, Dijon, garlic, and sugar; season with salt and pepper.
Pour vinegar mixture over mushrooms to coat.
Refrigerate mushrooms 4-24 hours, tossing occasionally.
Drain mushrooms and garnish with minced tarragon.
