Tarragon Marinated Mushrooms


YIELD 32 servings (about 2 cups)

TIME About 15 minutes + marinating

Before marinating mushrooms, be sure to remove any dirt and wipe them clean with a damp cloth.



  • 1 lb. button mushrooms, wiped clean, stems trimmed

  • 1 ½ cups white wine vinegar

  • 1 ½ cups extra-virgin olive oil

  • ¼ cup minced fresh tarragon

  • 2 T. Dijon mustard

  • 2 T. minced garlic

  • 1 T. sugar

  • Salt and black pepper to taste

  • Minced fresh tarragon


  • Halve or quarter mushrooms so they are bite-sized; transfer to a bowl or resealable plastic bag.

  • Whisk together vinegar, oil, ¼ cup tarragon, Dijon, garlic, and sugar; season with salt and pepper.

  • Pour vinegar mixture over mushrooms to coat.

  • Refrigerate mushrooms 4-24 hours, tossing occasionally.

  • Drain mushrooms and garnish with minced tarragon.
