Turkey Smash Burgers a'la Pete

YIELD: 6 Burgers

TIME: 30 minutes

 

Simple but delish! Waxed paper makes the 'smashing' so easy and you can make a bunch and freeze them for another day!


 

Ingredients:

  • 1 pkg. ground turkey (1lb. 3oz.)

  • 1 T. Italian Seasoning

  • 1 T. Smoked Paprika

  • 1 tsp. Onion Powder

  • 1 tsp. Garlic Powder

  • 1/4 C. bread crumbs

  • 1 egg

  • 2 T. grated butter

  • Worcestershire or Hot Sauce (optional)

Preparation:

  1. Place all ingredients in a bowl and mix well. Don't be too precious about quantities, increase or decrease to taste. The key is the grated butter!

  2. Lay out a long sheet of waxed paper and place balls of the mix (a little larger than a golf ball) spaced out in a row. Makes about 6. Make more... smaller balls if you want slider sized patties

  3. Fold the waxed paper over the top and flatten balls into patties with your hand or with a fancy burger patty smasher. The idea is to get the outside edges nice and thin so they cook up crispy, while leaving the middle a bit thicker.

  4. Cut between patties and then either refrigerate or freeze.

  5. Be sure to toast your bun of choice (pretzel bun pictured!) in a cast iron pan with some butter.

  6. In the same pan cook burgers in a little more butter, let cook on one side for a few minutes... until the edges start to brown slightly... without moving, flip, and add cheese if you want. Lower heat, cover, and cook another couple minutes until cheese is melted.

  7. Serve with any and all of the condiments of your choice!

    • Bacon!

    • Sautéed Onions or Mushrooms!

    • Sliced Avocado!

    • Lettuce & Tomato!

Tips:

  • You can always change up the seasonings! Make a Mediterranean Burger using Cilantro, Cumin, Coriander and/or Curry Powder!

  • For those of you who want to do patty melts here's a fun way to make square patties!!!
