Cheese Souffle

Serves 4 - 6

Ingredients:

1 T. quick tapioca

1/2 tsp. salt 1 C. milk 1 C. grated cheese 1 egg yolks, well beaten

1/8 tsp. Worcestershire 3 egg whites, beaten stiff


Preparation:

Combine tapioca, salt, and milk.


Cook in double boiler 10 min. stirring frequently.


Add cheese, and cook until it melts.


Add a little of the hot mixture to egg yolks, and stir into remaining hot mixture.


Add Worcestershire and cool slightly.


Fold into egg whites.


Bake in un-greased casserole in 300 oven for 1 hr 15 min.


Serve hot with tomato sauce if desired .
