This is Will’s very favorite holiday appetizer (included here at his request) …and he’s not alone! Super simple, fast and amazing! Every bite is a little sweet-savory flavor bomb. Double the batch or risk going without! Recipe makes 18 and can be scaled up or down.
18 pitted Medjool dates
18 1 x ¼ inch sticks/slivers of Parmigiano-Reggiano
6 bacon slices, cut crosswise into thirds
18 wooden toothpicks
Place oven rack in middle position and preheat to 450 degrees
Stuff each date with a piece of cheese
Wrap with a piece of bacon and secure with a toothpick
Bake 5 minutes, turn each piece with tongs and bake until crisp – another 5-6 minutes.
Drain on paper bag or parchment.
Best when warm, so serve immediately.
