With Pinwheel Lattice
1/2 C. cherry juice
1/2 C. sugar
3 T. flour
1/8 tsp. salt
2 T. butter
Almond extract (optional)
2 C. pitted cherries
1 - 8" pie crust, plus extra crust for pinwheel lattice
Pre-heat oven to 450.
Combine juice, flour, sugar, and salt;
Cook until thick.
Add butter (and a few drops almond if desired) and pour over cherries in 8" pie crust.
Make twisted lattice top crust; flute edge.
Bake in 450 oven for 10 min. and then in 350 for about 30 min.
