Chicken In Wine
2- 1 1/3 lb. whole broiler chickens or pieces
1 small onion
1/2 tsp. salt
1/8 tsp. pepper
1 C. flour
1-1 1/2 C. red wine
Cut broilers in pieces.
Sprinkle with salt and pepper, and toss in bag with flour.
Brown chicken in only enough oil as needed to keep from burning, adding more as necessary. (Low heat!)
Remove pieces as they brown and add more.
When all is brown, pour off excess fat and return chicken to pan.
With heat still low, pour over the red wine.
Place onion rings on top of chicken, and put pan in 450 oven to bake for 1/2 hr. or more.
Baste often, add more wine if necessary.
Remove from oven, baste one last time and serve immediately.
