Chocolate Velvet Dessert


Preparation: Melt over hot {not boiling) water:

1 C. Nestle's semi­ sweet chocolate bits.

Remove from heat. Beat in one at a time, 3 egg yolks. Set aside.


In a large bowl, beat until stiff but not dry: 3 egg whites. Add gradually and beat till stiff and satiny: 1/4 C. sugar.


Fold in chocolate mixture and 1 tsp. vanilla.


Spoon into sherbet glasses; chill till set. Serves 6.


Mocha variation:

Add 2 tsp. instant coffee with egg yolks. Delete vanilla. Substitute 1/4 tsp.

almond extract.
