Fish Chowder

Serves 6


  • 2 lbs.haddock

  • 1 bay leaf, crumbled

  • 2 oz. diced salt pork

  • 1 qt. milk

  • 2 onions sliced

  • 2 T. butter

  • 4 large potatoes, diced

  • 1 tsp. salt

  • 1 C. chopped celery

  • fresh parsley

  • freshly ground pepper

Simmer fish in 2 C. water for 15 min., drain, reserving broth.

Saute salt pork until crisp, remove and set aside.

Saute onions in pork fat until brown, add fish, potatoes, celery, and seasonings.

Pour in fish broth plus enough boiling water to make 3 C. liquid. Simmer for 30 min.

Add milk and butter and simmer 5 min.

Serve sprinkled with salt pork.
