As I recall, Gump Gump called this "gap n swallah"!
Double recipe to serve 8!
Ingredients:
2 T. plain gelatin
2 C. boiling water
2 dashes salt
1/2 C. cold water
1 1/3 C. sugar
1 tsp. grated lemon rind
Juice of one lemon
6 egg whites (beaten stiff)
Preparation:
Soak gelatin in cold water for 5 minutes.
Dissolve with hot water
Stir in sugar, salt, rind, juice, and chill.
When slightly thickened, beat with rotary beater till light and frothy.
Fold in beaten egg whites, turn into mold and chill until firm
Un-mold and serve with fresh fruit or whatever!
Great with a drizzle of chocolate sauce!
