Nanny's Pineapple Upside-down Cake

This is Will’s birthday favorite! Better than chocolate and excellent for breakfast the next day, if I do say so myself!


PS - The corner pieces are especially prized!


Recipe is for 9” x 9” pan (scale up 1.5x for a 9” x 13” pan). Dunkin Hines Yellow Butter Cake mix can be subbed for the batter described below.



 

Preparation


Topping

  • Melt 4 T. butter in bottom of 9 x 9 pan.

  • Add 1 c. brown sugar, blend thoroughly and spread evenly over bottom of pan

  • Arrange pineapple rings (need 1 can) on top of butter/brown sugar mixture

  • Place Maraschino cherry in the middle of each ring

  • Cover with batter – see below or use mix

Batter

  • Cream together ¼ c. butter and ¾ c. granulated sugar

  • Add 1 egg and ½ c. pineapple juice (from can)

  • Add 2 tsp. baking powder

  • Add ¾ tsp. salt

  • Mix in 1 ½ c. flour, beat until smooth

Bake

  • Bake in 350 degree oven until golden brown and a toothpick comes out clean (25-30 minutes) or according to directions for the mix.
