Quiche Lorraine

Serves 4 - 6

Preparation:

Have ready 2 - 8" or 1-10" pie shells, unbaked.


In cold shells place layers of:

  • 6 slices bacon, chopped and fried until almost done.

  • 12 thin slices gruyere cheese.

  • 2 medium onions in rings, sautéed in butter.

Pour over a custard of:

  • 4 lg. eggs

  • 2 T. melted butter

  • 1 T. flour

  • 1/2 tsp. salt

  • 2 C. light cream

  • dash cayenne

Sprinkle with 1/8 tsp. nutmeg.


Bake in 375 oven until just set-about 30-40 min. Top will be light brown.

Slice in pie shaped slices.
