Vegetable Quiche

A staple at Camp Wohika!

 

Ingredients:

Have ready 1-10" pie shell, unbaked.


Filling:

1/2 C. chopped onion

1 T. butter

2 eggs beaten slightly

1 tsp. salt

1/2 tsp. celery salt

1 lb. spinach

1/2 clove garlic, mashed

1 1/2 C. shredded cheese

1/4 C. milk

1 tsp. basil

tomato, thinly sliced


Topping:

  • 1 T. bread crumbs

  • 1 T. parmesan cheese


Preparation:

Saute onion, add vegetables, cook until water evaporates.

Combine all ingredients, mix well, pour into shell.


Place thinly sliced tomatoes around edge.


Bake 425 for 15 minutes, then 350 for 10 minutes.


Sprinkle crumb/parmesan mixture on tomatoes and bake 10 minutes more.


Let stand before cutting.
